Sauteed onions, julienne carrots in a casserole type stew, seasoned simply with mixed herbs, salt and pepper and topped with mashed potato.  This butterbean bake is a homely, warming dish which has a distinct creamy flavour given to it by the butterbeans which are rich and buttery as the name suggests.  Butterbeans are also high in protein making it a good wholesome dinner.  Vegan

Ingredients

Organic butterbeans, potato, carrots, onion, garlic, parsley, organic olive oil, mixed herbs, bouillon, pepper and salt.

Cooking Instructions

Cover with tinfoil and heat in a preheated oven at gas mark 4 (350f / 180c) for about 35mins from chilled or 45mins from frozen. Take the tinfoil off for the last 6 mins so the top of the bake can get a little crispy. Enjoy!

Serving Suggestions

This bake is a complete meal in itself as it has vegetables, protein, carbohydrate and fibre all together in one delicious meal. Can be served with peas, broccoli or a salad.
